Description

Composition: Wine produced from Grenache and Syrah grapes.

Soil: Pebbly soil, of a marly calcareous nature, formed during the alluvial phase of the Elsa River in the Upper Pliocene, about 3 million years ago. This type of soil produces wines that are rich in body but very well balanced.

Training Method: In the vineyards, we use the spurred cordon technique, with some areas utilizing the Guyot method, and a plant density of approximately 5,000 vines per hectare.

Harvest Period: The harvest is carried out manually, usually during the first week of September.

Winemaking and Aging: The grapes are gently pressed without maceration on the skins. The must obtained is fermented slowly at a temperature of 14°C to enhance its fruity notes. For sparkling wine production, we chose the Charmat Method, with frequent battonage to enhance the finesse and fragrance of the wine. The wine then undergoes an appropriate period of bottle aging to restore balance and softness. The bubbles are fine and persistent, very pleasant both to the eye and the palate.

Tasting Notes: Pink color. Intense aroma with floral and bitter almond notes. Lively, full-bodied taste with excellent acidity that enhances its flavor.

Food Pairings: Excellent as an aperitif and as a conversation wine, but also perfect throughout the meal to accompany appetizers, Mediterranean dishes, fish, and vegetables.
