6 BOTTLES OF TENUTA LA GABBIOLA RED WINE DOCG RISERVA

The Chianti Classico Riserva is born from a careful selection of the finest Sangiovese grapes grown at Tenuta La Gabbiola. The soils have a medium texture with a clayey tendency, a good presence of skeleton, and moderate fertility. The training system used is Guyot and spurred cordon, with a planting density of approximately 5,000 vines per hectare. The harvest is carried out manually in October.

The Chianti Classico Riserva Tenuta La Gabbiola is a well-balanced red wine that expresses its best qualities within 4 to 6 years after the harvest. During alcoholic fermentation, which takes place at a controlled temperature (around 28–30°C), gentle punch-downs are performed to ensure optimal extraction of polyphenols and polyalcohols from the skins and seeds. The fermentation lasts approximately 20 days. The wine is then placed in 25hl oak barrels, where it remains for at least 20 months. The second fermentation, malolactic fermentation, takes place in wood.

During aging, the wine refines, achieving the complexity and smoothness that set it apart. We believe that for our Sangiovese, the use of large 25hl oak barrels is preferable to small barriques. This allows us to obtain a wine with great structure, softness, and richness, offering a wide aromatic range—from primary fruity and floral notes to secondary aromas and tertiary hints of spices and toast. The result is a great wine in which the oak integrates perfectly with the best characteristics of Sangiovese.
The most distinctive feature of the Chianti Classico DOCG Riserva Tenuta La Gabbiola is its smoothness, combined with the authenticity of Sangiovese. Before being released on the market, the wine spends at least 6 months in the bottle.

Description

Vines: predominantly made from Sangiovese grapes.
Appearance: Ruby red, full, dense, and consistent.
Aroma: Intense and persistent, with fruity hints of cherry and blackberry, floral notes of violet and iris, as well as distinct perceptions of spices and tobacco.
Taste: Warm, smooth, fruity, with soft tannins.
Pairings: This wine pairs excellently with rich and substantial first courses, such as polenta with sauce and baked lasagna, but it truly shines with all meat-based second courses. From grilled meats (like the typical Florentine steak) to stewed meats and fricassee, it is an outstanding match. It is also excellent with pork prepared in various ways, as the tannins contrast well with the succulence of the meat, while the alcohol cleanses the palate of its fattiness and savoriness.
